While its origin remains a bit mysterious and open to interpretation, this versatile cocktail has become a favorite among bartenders and mixologists who put their own spin on it.


Crafting a Frosty Coconut Cocktail is a delightful experience with countless recipe variations. Whether you're sipping it in the warmth of a South African December or embracing its holiday spirit, this refreshing drink has something for everyone.


As we navigated the festive season, this cocktail checked all our boxes - it was cool and refreshing for the South African summer, offered a unique twist, and added a bit of holiday cheer to our celebrations. ALCOHOLIC VERSION


Ingredients


*Simple syrup/light corn syrup (for rimming glasses)

• Flaked/Desiccated coconut (for rimming glasses)

• 8 cups ice (more or less depending on desired consistency)

• 1 cup pineapple juice

• ½ cup curaçao

• ½ cup vodka or light rum (we used vodka)

• ½ cup cream of coconut NOT coconut cream


Method


  1. Rim the glasses: Pour a thin layer of corn syrup onto a plate and dip the rims into the corn syrup, then dip in coconut flakes.

  2. In a blender, blend ice, pineapple juice, blue curacao, vodka and cream of coconut until desired consistency is reached. Pour into glasses and serve immediately.


NON-ALCOHOLIC VERSION


*Simple syrup/light corn syrup (for rimming glasses)

• Flaked/Desiccated coconut (for rimming glasses)

• 6 cups ice (more or less depending on desired consistency)

• 1 cup pineapple juice

• ½ cup cream of coconut NOT coconut cream

6 to 8 drops blue food coloring


  1. Rim the glasses: Pour a thin layer of corn syrup onto a plate and dip the rims into the corn syrup, then dip in coconut flakes.

  2. Place the ice, pineapple juice, cream of coconut, and 6 to 8 drops of the food coloring in your blender pitcher. Cover and blend until smooth. Add more food coloring until your desired color is reached.

💡Tip:


We highly recommend mixing in a blender or a cocktail shaker to combine the ingredients. The ingredients start to separate if not properly mixed.

*What is simple syrup?


Simple syrup is a liquid sweetener made by dissolving sugar in water. You just need to mix equal parts water & sugar together.


Ingredients


  • 1 cup white sugar

  • 1 cup water

Directions


  1. Combine sugar and water in a medium saucepan over medium heat; bring to a boil, stirring, until sugar has dissolved. Allow to cool.

  2. Pour into a clean jar and seal with a tight-fitting lid; store in the refrigerator for up to one month.
