Easy Potato Curry

Comforting, simple, and full of flavour


This Easy-Peasy Potato Curry is one of those weeknight recipes you’ll come back to again and again. Made with humble ingredients and minimal prep, it delivers rich, warming flavour with very little effort. Soft potatoes simmered in a spiced tomato-coconut sauce make this dish hearty, comforting, and naturally plant-based.


Perfect served over rice, with flatbread, or even enjoyed on its own.


Ingredients (serves 4)


  • 2 tablespoons oil (vegetable or coconut oil work well)

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground turmeric

  • ½ teaspoon chili powder (optional, to taste)

  • 4 medium potatoes, peeled and cubed

  • 1 can (400 g) diced tomatoes

  • 1 can (400 ml) coconut milk

  • Salt, to taste

  • Fresh coriander (cilantro), to garnish


To serve


  • Steamed rice or flatbread


Method

  1. Build the flavour base Heat the oil in a large pan over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the garlic and ginger and cook for another minute until fragrant.

  2. Toast the spices Add the curry powder, cumin, turmeric, and chili powder. Stir well and cook for about 30 seconds to bloom the spices and deepen their flavour.

  3. Add the potatoes Add the cubed potatoes to the pan and toss to coat them in the spiced onion mixture.

  4. Simmer the curry Pour in the diced tomatoes and coconut milk. Season with salt and stir well. Bring to a gentle simmer, cover, and cook for 20–25 minutes, or until the potatoes are tender and the sauce has thickened slightly.

  5. Finish & serve Taste and adjust seasoning if needed. Garnish with fresh coriander and serve hot over rice or with warm flatbread.


Tips & Variation


  • Make it heartier: Add chickpeas or lentils during the simmering stage.

  • Extra heat: Finish with chili oil or fresh sliced chilli.

  • Veg boost: Spinach or peas stirred in at the end work beautifully.

  • Make ahead: This curry tastes even better the next day as the flavours deepen.
